Quinoa-stuffed Bell Peppers

These colorful bell peppers are stuffed with a flavorful mixture of quinoa, vegetables, and spices, creating a wholesome and satisfying meal. The combination of fluffy quinoa, crunchy veggies, and aromatic herbs makes this dish a delightful choice for a nutritious dinner.


  • 4 bell peppers (any color)
  • 1 cup cooked quinoa
  • 1 small onion, diced
  • 1 garlic clove, minced
  • 1 cup diced tomatoes
  • 1/2 cup corn kernels
  • 1/2 cup black beans, rinsed and drained
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)


  1. Preheat the oven to 375°F (190°C). Slice off the tops of the bell peppers and remove the seeds and membranes.
  2. In a skillet, heat some olive oil over medium heat. Sauté the onion and garlic until fragrant and translucent.
  3. Add the diced tomatoes, corn, black beans, cumin, paprika, salt, and pepper to the skillet. Cook for 5 minutes, allowing the flavors to meld together.
  4. Stir in the cooked quinoa and mix well. Adjust the seasoning if needed.
  5. Stuff the bell peppers with the quinoa and vegetable mixture, packing it tightly. Place the stuffed peppers in a baking dish.
  6. Bake for 25-30 minutes until the peppers are tender and slightly charred.
  7. Remove from the oven and let them cool for a few minutes. Garnish with fresh cilantro before serving.
